PCMs come in three forms, a dry powder, wet cake and slurry, all of which absorb and release energy as they change form from solid to liquid to gaseous and back.

When PCMs are used for controlling a drink’s temperature, the material replaces traditional insulation that seeks to trap the energy of an already hot liquid inside a container by not absorbing the heat. PCM materials absorb the energy and transform into a liquid or gas, depending on the amount of energy and the PCM’s original state, and then as the liquid inside the container cools, the PCM returns to its original state and transfers the energy back into the liquid.

This allows you to maintain a steady temperature instead of simply slowing how quickly a liquid will cool.
