The creator of peanut butter as we know it is actually nutritionist John Harvey Kellogg, the cereal pioneer. In 1985, Kellogg filed a patent for “food compound,” which consisted of ground up boiled nuts. This edible paste was designed for patients of a sanitarium and was meant to be easily digestible.
