Historians believe that cookies originated in Persia around the 7th century A.D. Now known as Iran, Persia was one of the first countries to cultivate sugar. They began baking sweet cakes and would test the batter and the oven temperature by baking small amounts, which must have been well-received goodies.
It took some time, but by the end of the 14th century, merchants were selling filled wafer cookies on Paris streets. Cookbooks dating back to the Renaissance had numerous cookie recipes.
