The rack in a roasting pan is critical for cooking meat properly. It raises the meat off of the bottom of the pan so that hot air can pass underneath while cooking. If your meat is resting in the bottom of the pan, it is really just being boiled or steamed, not roasted. Plus, without the rack, the bottom of the meat becomes soggy and soft. The rack helps ensure that the meat is crispy on all sides and is adequately browned. A rack also helps the juices from the meat drip to the bottom of the pan, which you can use to make delectable gravies and sauces.
Ensure that both the rack and the roasting pan have strong handles so that they are easy to carry when full. This is especially important when taking a hot pan out of the oven. Large loop handles that are secured with sturdy rivets are the best option. They need to be wide enough so that they are easy to hold while wearing thick oven mitts.

- One of the most important aspects to look at when selecting a roasting pan with a rack is the material. There are several options to choose from based on your needs. Copper is a material that offers excellent heat conductivity. However, it can be costly and difficult to keep clean. Plus, it doesn’t work very well with induction ovens. Multi-ply pans have aluminum sandwiched between stainless steel. These pans don’t have any hot spots and are highly durable and long-lasting. Stainless steel on its own is easy to clean, durable and lightweight. However, it is not a good heat conductor and gets hot spots that can burn food. Another option is anodized aluminum, which is dark in color. It is highly durable and non-stick.
