From The Manufacturer

A TRUSTED FAVORITE Preferred by both home chefs and culinary professionals, the 12″ Victorinox Fibrox Pro Slicing Knife can handle nearly every kitchen task imaginable. Crafted with a comfortable handle, superior weight and balance, and a razor sharp Granton Blade that rarely requires re-sharpening, this knife is an essential tool for every kitchen. KEY FEATURES High-quality, lightweight European steel. Handle design reduces hand and wrist fatigue. Fit for slicing both firm and soft meats. Long, straight blade for maximized cutting performance. Granton Blade to minimize friction and prevent food from sticking. Non-slip patented Fibrox Pro handle for a secure and comfortable grip no matter the hand size. National Sanitary Foundation (NSF) approved and dishwasher safe. CARE AND USE Be good to your knives and they’ll be good to you. Following these simple guidelines will ensure that you get the longest life out of your knife! CLEANING Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately. While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge. SHARPENING For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best. FORMERLY FORSCHNER In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.

Very sharp 12" blade makes it easy to carve even slices. Granton blade creates pockets of air to prevent food from sticking to the blade.
This essential tool is made with a beautiful and ergonomic, comfy handle and offers excellent balance and a razor-sharp quality stainless steel blade that will rarely need re-sharpening.
The sharp blade and edge are able to provide you with thin, small, and even slices. Its operation is effortless as it has been specially designed with an ergonomic handle for a safe, non-slip grip, even when it is wet.
The Victorinox Granton will make short work of a whole turkey or roast chicken, a side of ham, or almost any other type of meat. Its sharp, broad blade helps cleave clean and tidy slices perfect for a handsome holiday display plate.
The handle is easy to grip although made from plastic, and overall the knife feels very stable. The tip is rounded, but do not let it fool you - it is as sharp. We have tried it on roasts, raw meats, and even my birthday cake and it always performed great!
The mirror polish, plus fluted dimples, reduce friction and sticking for an easy gliding action that makes cutting food effortless.

Granton edge prevents food from sticking to the blade.
The knife itself is relatively lightweight. I usually recommend slightly heavier knives for other purposes, but slicing knives are often better when they are light. Holding the knife away from any sort of cutting surface and slicing off enough portions for an entire dinner party would lead to wrist and forearm fatigue if you found yourself working with a heavier knife.
It is designed in a way that you can hold it comfortably. It is also balanced which allows total control when slicing. The knife features Granton blade which creates pockets of air. This great feature will prevent food from sticking to the blade.

At 12 inches long the knife can easily slice large briskets in a single stroke. While you could easily slice paper thin with this knife, it does an equally good job holding a straight line while cutting pencil sized brisket slices.
The knife is very easy to sharpen because it is ice tempered (will maintain sharpness)
The Granton blade of the knife creates pockets of air when slicing to prevent the food from sticking to the blade. They also help to reduce friction so slicing becomes easier and more efficient.
This makes for extremely easy and efficient slicing, and because its composed of super lightweight European steel with an ergonomic, nonslip handle, your hand and wrist will not get tired after heavy usage.
This 12 inches Victorinox knife is designed to handle almost every kitchen slicing tasks perfectly. The blade comes in granton style with a round tip. This feature helps the knife to create air pocket which helps to reduce friction and improve separation of the raw meat and the chicken breast while slicing.
The European steel made blade with the ergonomic non-slip handle provides ease of use even after heavy use. The European steel is super light and gives great efficient slicing. Your wrist and hand will not get tired in any case.
The ergonomic handle is made with a lightweight and non-slip Fibrox Pro material which allows perfect hand-fitting. This material reduces any hand and wrist fatigue when slicing meat and other food items.

What experts didn't like

Not ideal for cutting smaller meats due to it's length.
The lack of a protection case.
The only complaint is the lack of sheath or blade guard as it is not safe nor good for the blade to store the knife without it.
A small number of reviewers have received a dull knife, which sounds like a manufacturing issue
Not suitable for fruits or vegetables.
This knife has been designed for professionals who use knives day in day out. Its sharp end near the handle may be dangerous for non-professionals who are used to more manageable knives.
Thin blade limits versatility.
One of the few downsides of this knife is that as it is razor sharp, it does not come with sheath, so care is needed to be taking in its storage.
For some people the 12 inches size is cumbersome.
Requires frequent sharpening
