You can specify temperature to a single degree from 104 to 208 degrees Fahrenheit. You can also dial in specific values for cooking time, pressure level and delay time.

You will definitely enjoy is the useful LED display. It’s bright and easy to read. Although it does take a little time to get used to maneuvering around the panel, the dial always offers easy access and adjustability.
Comes so clean in the dishwasher...use it constantly to steam fish.

It has 16 built-in smart programs that make you cook versatile food every other day. You can cook your favorite meal 70% faster than other stovetop pressure cooker. It saves energy as well as locks the nutrients and aroma into the food.
The AUTO-SET Pressure Valve is one of my favorite features in the ULTRA. Once I set my time and pressure, I press START and that’s it. The pressure valve automatically seals and the pressure cooking process starts. LOVE IT! It’s most appreciated by my kids and hubby, who don’t use the Instant Pot on a daily basis, so tendency to forget to turn that valve is way higher.
Things I like: Altitude setting makes it easier to use the ultra pot in all conditions, at all places. You can even carry it to a different country if you are traveling.
I used the Ultra as my daily driver for a few months. I got comfortable enough with the interface that I did not overshoot too often, or turn clockwise when I needed to go counter-clockwise.

What reviewers didn't like

The downside of all the added functions is a slightly higher price and a bit of a learning curve in figuring out how to use them.
The instructions for changing the settings are lacking, so you may want to do some internet research for instructions by experienced users instead.
Unfortunately, Instant Pot does not provide any information on how this function is supposed to be used. Instant Pot could not cite data, guidelines or research sourced to come up with the ULTRA’s recommended sterilization processing times, temperatures and pressures
Surprisingly, there’s no instructions on how to use the machine. You have to rely on bloggers or other people on the internet to get the hang of it.
We don’t like the lack of extreme versatility. While the Instant Pot Ultra is very versatile, it is not the most versatile in the industry. This model lacks some special features that we would like to see improved such as the temperature setting.
Not everything with the IP is a breeze. It took me several tries to get hard-boiled eggs right, and sometimes recipes take longer than expected when something is a "natural release" meaning, you wait for the machine to release steam and de-pressurize on its own, rather than forcing the steam out with the "quick release" button.
The greatest negative is perhaps the price. That would be a con for anyone on a tight budget.
As the “full-loaded” model, it lacks Bluetooth functionality.

The ultra mode of ultra Instant pot is actually the same as the manual mode in other models of the Instant pot. It’s not at all a new thing that has to be priced for. I know it’s not lacking; it’s just my personal opinion about this model.
