The only way to adjust the temperature and time is on the control panel. The LED control panel features a touch screen digital control that lets you select and adjust easily. The SSV800 Accu Slim is the second sous vide immersion circulator marketed by Instant Pot. I definitely prefer it to the SV800 because of its smaller size, lower price, and similar performance. The Accu Slim is very plain and simple, no fancy bells and whistles, but I feel that's one of its strengths - this simplicity makes it quite easy to use. The performance of the Accu Slim puts it about in the middle of the pack of available sous vide immersion circulators. It does a good job of maintaining a consistent temperature in the water bath, which of course is the most important function of the device. It should be plenty powerful enough to work in a water bath with the capacity of 4 to 5 gallons.
The Instant Pot SSV800 Accu Slim is a smaller and lighter version of the Instant Pot SV800. It has a removable sleeve for easy cleaning and the part in contact with the water is stainless steel. It is also relatively inexpensive coming in around $80. Performance wise it's nearly identical to the SV800 and holds the temperature very steady. The Accu Slim is quite simple which makes it easy to use. It is also manufactured by a well-respected brand of kitchen appliances.

What reviewers didn't like

There are a few downsides: The Accu Slim only cooks in increments of ten minutes, and you set the temperature and time via touch-screen plus and minus buttons, which makes for a lot of repeated button pressing. Also, the lack of an app means you'll need to find recipes elsewhere (such as, uh, the free Joule app). Still, this thing is small, heats up just as quickly as the Anova, and is $50 cheaper than its competitors.
The timer function is poorly designed; if you set a timer when you first turn on the machine, it will begin counting down as soon as the water bath reaches its target temperature, whether your food is in the water or not. Then the machine will turn itself off as soon as the timer ends, whether you're there to remove it or not. Because the clamp is fixed rather than adjustable, it can't be secured to every vessel. The Accu Slim also does not come with any detailed cooking guides or recipes, although, if Instant Pot's robust online user resources for its multi-cooker are any indication, this may improve with time.

We do feel that the Instant Pot SSV800 Accu Slim is a better choice than the SV800 since it is smaller and has similar performance characteristics. But we are concerned with the way that the timer operates, since it is a hassle to remember to set, but more importantly, could result in unsafe situations and ruined food. It is inexpensive, but we feel that there are other options in the same price range that we prefer.
