This product is, quite literally, the definition of an affordable sous vide immersion cooker. It has the typical stainless steel skirt and hard-shelled plastic covering for the electrical components. One major upside to this immersion cooker is its brand integration with other Instant Pot products. If, like many, you’ve received an Instant Pot then this circulator can clamp directly onto the side.

The top of the unit is made of sturdy polycarbonate and the portion in the bath is stainless steel. Perhaps the greatest feature of the Accu Slim is its low cost. Occasionally, some other immersion circulators will be on sale for a similar price, but the Accu Slim is one of the few circulators with a consistently low price.

One of the things I immediately noticed about the Accu Slim was the skirt surrounding the heating element contains holes around the sides, and it also contains holes on the bottom. This helps the water flow more effectively through the machine, and it helps to prevent cold spots.

Actually, one of the things I really liked about the Instant Pot Immersion circulator was the clear, bright button on the face of the device. Surprisingly, more than one other circulator I tested had low-lit button which made it hard to read and navigate. One issue we experienced with this unit was, unfortunately, quality of shipping. There were numerous scratches and scuffs on the LCD display. This is after pulling off the plastic tab on the screen. Somehow, the unit must have been damaged sometime between manufacturing and packaging. During our test cook we found that our pork chops were slightly underdone, despite following InstantPot’s cooking guide. This may indicate that the Instant Pot sous vide Immersion Circulator’s ability to retain heat balance as an issue.

Unfortunately, it did not live up to my expectations for the Instant Pot brand or the price it was selling at. It cooked the food accurately, and there are some definite advantages to this model over other brands, but my main disappointment was that it offered basic features for a premium price.
