If your meat is resting in the bottom of the pan, it is really just being boiled or steamed, not roasted. Plus, without the rack, the bottom of the meat becomes soggy and soft. The rack helps ensure that the meat is crispy on all sides and is adequately browned. A rack also helps the juices from the meat drip to the bottom of the pan, which you can use to make delectable gravies and sauces.
