The handle isn’t something special, but it is very nice to hold in hand and it is reasonably comfortable. We were impressed with the overall shape and comfort it provided. Cleaning the handle is easy and you won’t need more than just a few minutes of your time.

The edge of this knife deserves special mention. It is sharpened to 16-18° on either side. This helps in maintaining a perfect balance between the blade’s resilience and overall sharpness. Moreover, the blade height enables comfortable knuckle clearance and possibly more room to work with.

The blade is nice and flexible and it’s very simple to use. It moves through sinew and meat easily, between the bone and the skin.
The flexible blade is very maneuverable between the spine, flesh and sinew (tougher tissues between muscle and bone; tendon or ligament).
This is also a knife that is easy to clean. It is a dishwasher-safe knife, and while the handle is made from pakka”wood”, this material is actually a composite of wood and plastic. You can easily wash them by hand or with a dishwater without any trouble.
The edge is carefully hand honed to 16-18° for every side, keeping up the ideal harmony between cutting edge sharpness and most extreme strength.
The fillet knife is flexible, allowing owners to use it easily in either hand. It has a hand-polished edge and pakkawood handle. The grip handle is ergonomic, and the wood material doesn't rust as quickly as other material finishes do.
The blade of the GS is made of German steel that’s high in carbon and with a balanced 55 Rockwell hardness rating.
It has been carefully designed to make skinning, trimming, filleting, de-scaling, de-boning and butterflying you fish or bird very satisfying and efficient. Consider this blade and extension of your arm and we say this because it features incredible control.
The handle on this is knife is comfort to touch and firm grip. The knife features chromium for stain resistance, triple riveted for more durability.

What reviewers didn't like

One thing which customers have to keep in mind regarding this particular purchase is when the DALSTRONG Fillet Knife performs so well for fish cutting, it does lag a bit when it comes to general meat cutting.
Not recommended for cutting meat.
This is a truly premium knife with the main complaint being the relatively high price compared to other models.

It’s a little bit difficult to sharpen.
Most users seem to be quite satisfied with their product but a few of them are not so satisfied with the flexibility potential of the knife. But that may also be hampered by the overall lack of understanding of the technique or the type of fish that they are filleting.
The wooden handle of the knife is polished carefully, but it is not as durable as synthetic resin or rubber. Water and fishy smell resistance are also not as good.
Some buyers have found the knife not that sharp out of the box.
A problem that you might happen to have is that the knife’s blade might not snap back into straightness. After using the knight, the blade might have a slight crook in it from being bent too far back, and this can lead to problems the next time that you use it.
The blade and edge shape are superior quality on this knife. However, a review indicates that it doesn't last very long. The edge may not be as durable as other Dalstrong knives.
Quite expensive for a fillet knife.
