There's no alarm or beeping when you reach your target temperature. There is an alarm when you reach your finished cooking time, but then device shuts off automatically. There's no option to continue the cook if you need a few more minutes to finish up what you're doing.

Cooking is a marriage of art and science, and sous vide machines are a great example of that. In the late 1960s, French and American engineers mastered food-grade plastic films and vacuum packing. Since sous vide machines could keep packaged foods in a water bath at a consistent temperature, they were perfect for sealing and pasteurizing industrially prepared foods for longer shelf life.
